According to experts, this method can help suppress the formation of dangerous compounds called advanced glycation end products (AGEs), which play a role in the aging process and chronic disease.

, the body actually naturally produces AGEs, but these compounds are also formed when we cook at high temperatures and without water, such as frying, baking, or grilling.
“AGEs can change the structure and function of our cells over time,” explains functional nutritionist Samantha Peterson, founder of Simply Wellness.
“When the amount builds up faster than the body’s ability to get rid of it, that’s where the problem arises,” he said.
High levels of AGEs can trigger systemic inflammation and oxidative stress, two things that are linked to various chronic diseases such as diabetes, heart disease and neurodegenerative disorders.
“High amounts of AGEs can affect heart health and metabolism by making blood vessels stiff and contributing to insulin resistance and type 2 diabetes,” adds nutritionist Kaytee Hadley, founder of Holistic Health and Wellness.
The advantages of water-based cooking methods
Cooking with water is the best way to prevent excessive formation of AGEs.These compounds may still form due to exposure to heat, but not as much as when cooking at high temperatures and high heat.
Additionally, water-based cooking methods also help retain more vitamins, minerals and phytonutrients in food compared to dry methods such as baking or frying.
If the cooking water is also consumed, such as in soup, water-soluble nutrients can still be obtained.
Whatever cooking method you use, you are advised to increase your consumption of foods rich in antioxidants, such as fruit, vegetables and spices such as rosemary, turmeric and oregano.Antioxidants not only help fight the effects of AGEs, but can also slow down the body’s natural aging process.
So, winter or not, there’s no harm in turning on the stove more often to make soup, stew or steamed vegetables.Apart from being relaxing, this water-based cooking method can be a simple step towards a longer and healthier life.
