According to La Cucina Italiana magazine, a sort of ‘bible’ of Italian cooking, an authentic carbonara recipe traditionally includes guanciale, pecorino cheese and grana cheese.Replacing guanciale with pancetta or other foods is considered unacceptable.
Anger grew when the product appeared in stores in the European Parliament.The European Parliament is an institution that Italy often turns to to protect its traditional food from counterfeiting.
Italian Agriculture Minister Francesco Lollobrigida also requested an investigation into alleged culinary crimes on market shelves at the institution.
“Apart from the pancetta in carbonara… all these products represent the worst of Italian-sounding products. It is unacceptable to see them on the shelves of European Parliament supermarkets. I have asked for an urgent investigation,” Lollobrigida wrote on Facebook as reported

For Lollobrogida, the problem with carbonara sauce is not a matter of bad taste but rather national pride.
Moreover, currently Italy is trying to have its cuisine recognized by UNESCO as a product of the Intangible Cultural Heritage of Humanity.Then, according to him, the “Italian nuanced” foods that are common throughout the world actually obscure the authenticity of one of the most important aspects of Italian culture.
“Our cooking is simple, but not easy,” Lollobrigida said at the Summer Fancy Food Festival in New York in July.
This is not the first time the excitement about ‘fake’ carbonara sauce has occurred.Last year, Heinz introduced a canned version of spaghetti carbonara.The product uses pancetta instead of guanciale which sparked scathing comments.
