Clinical nutrition specialist, Ardian Sandhi Pramesti, explained that boiled and steamed food is very susceptible to bacterial contamination if left to cool.
“Boiled or steamed food has a high water content, which makes it susceptible to bacteria if left in the temperature danger zone, namely 4°C to 60°C. In this range, bacteria such as Salmonella, E. coli, or Bacillus cereus can multiply twice every 20 minutes,” said Ardian, quoting

According to him, one of the causes of food-borne illness is the improper cooling process after the dish is finished making.
“If hot food is allowed to cool slowly at room temperature, bacteria can produce heat-resistant toxins. Even if it is reheated, the toxin is still there and can cause infection,” he explained.
He added that foods high in carbohydrates such as cassava, potatoes and corn are more risky because Bacillus cereus grows easily if the cooling process is slow.
However, cold steamed food does not mean it is dangerous as long as it is stored properly.
“The risk arises if it is left cold on the table or at room temperature for too long,” said Ardian.
How to safely store steamed food
To ensure it remains safe for consumption and maintains its nutritional content, Ardian suggests the following steps:
• Consume immediately after cooking.Foods such as sweet potatoes, cassava, potatoes or corn should be eaten straight to maintain their taste and nutrition.
• Cool quickly and store in the refrigerator.Maximum duration of two hours at room temperature.After that, put it in the refrigerator, then it can be eaten cold or reheated.
• Avoid repeated heating.Repeated heating and cooling can reduce nutritional quality and increase the risk of contamination.
